Stewed Steak and Dumplings

1/2 -3/4kg beef steak
seasoning
40gr fat
2 onions
2 - 3 large carrots
425ml water
1/2 bayleaf
little nutmeg or mixed herbs
Dumplings:
100gr flour
seasoning
50gr shredded suet
water to mix
Cut the meat into neat squares. Season then brown in the fat.
Add the sliced onions and carrots, water and flavourings.
Transfer the contents to a casserole dish and cook for 2 hours.
Make the Dumplings: Sieve the dry ingredients together, add the suet
and mix to a soft dough with the water. Roll into balls with lightly floured hands.
Check there is enough liquid in the stew, then drop in the dumplings and cook
for 15 - 20 minutes.
( Oven Temperature: 350 F,180 C ,Gas mark 4)
A great winter warmer!!

Yorkshire Puddings

100gr plain flour
pinch of salt
1 egg
250ml milk, or milk and water
15 -25 gr fat
Sieve flour and salt into a basin
Add the egg and beat well, then beat in enough liquid to give a stiff batter.
Allow to stand for a few minutes, then gradually beat in the remainder
of the liquid. Rub patty or Yorkshire Pudding tin with fat and heat in oven.
Give battera final whisk, put into the tins and bake for 10 mins
or until golden colour.
(Oven Tem0perature: 425 -475 f, 220 -240 c,gas mark 7 -9)

Mushrooms in White Wine

3/4kg mushrooms
50gr butter
2 tabl spoons oil
juice and finely grated rind
of 1 large lemon
275ml white wine
seasoning
Wash the mushrooms well and trimm the base of the stalks.
Heat the butter and oil in a large pan and toss the mushrooms, taking care not to brown or dry them.
Add the lemon juice and rind, white wine and seasoning. Cook for 20
minutes turning frequently to keep them moist. Leave the lid of the pan
so that the liquid reduces giving the mushrooms a good flavour.
